I went to a professional tennis tournament yesterday. The weather was gorgeous and the best part was relaxing in the sun. The tennis part was fairly interesting, I enjoyed seeing professionals at the top of their game, so to speak:

The tournament coincided with lunchtime so I packed a lunch to take with Alan and me. We found tables in the shade of a lemon tree. I made salads topped with avocado and kiwi and a mini-Lara bar for me for dessert and some leftover “dessert” green smoothie for Alan. I even packed water because I didn’t want to pay $$$ for water at the event:
I thought I would post my recipe for my basic “dessert” green smoothie that I make fairly often. It’s slightly different than my Anti-Cancer Green Breakfast Smoothie because I make it with almond milk instead of hemp milk. I also use slightly more fruit to greens to make it sweeter.
I use this much fruit for two people:

Homemade almond milk is made in the Vitamix by simply blending 1/4 cup of raw almonds with two cups of water. It goes from this:

Lately, I’ve also been adding a tablespoon of chia seeds to the mix. Chia seeds are so healthy, they are an excellent source of omega-3 fatty acids. This is what my Green Dessert Smoothie looks like when it’s done:
The fruit covers the taste of the greens and the dates give it a mild sweetness. This recipe is not unlike my Chocolatey-Orange Dessert Green Smoothie recipe I posted a few weeks ago, but this one has more berries, chia seeds and uses raw greens.
Basic Green Dessert Smoothie – Makes 2 servings
1/4 cup raw almonds, soaked in water overnight and rinsed well
2 cups filtered water
1 frozen banana
1/2 cup each frozen organic cherries, blueberries and blackberries
1 cup frozen organic strawberries
4 small mandarin oranges (or you can substitute an additional 1/2 cup of frozen fruit)
1 tablespoon chia seeds
1 tablespoon flax meal
4 large dates, pitted
1 tablespoon maca powder (optional)
4 cups of raw greens, your choice (I rotate using kale, dandelion greens, arugula, spinach, watercress, romaine, collard greens, chard, etc.)
Make the almond milk by blending the almonds with the water on high in a high-speed blender for 30 seconds. Add fruit to blender topped with the greens, dates, chia seeds, flax meal and macs powder. Blend again on high for at least a minute or until ingredients are well combined. Enjoy cold.
