Air Fryer Roasted Delicata Squash (Easy Recipe)

This Air Fryer Delicata Squash is so simple and delicious. This recipe is so easy to make, and goes with almost any main dish. Best of all, it’s ready in just 25 minutes!

  • 1 Delicata squash
  • 1 teaspoon coconut oil, melted (see notes for alternatives)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper


  1. Wash the squash and pat it dry. Then, use a Chef’s knife to cut the squash in half lengthwise.
  2. Use a spoon to scoop out and discard the seeds.
  3. Then, turn the squash cut side down on a cutting board and slice it into 1-inch slices. Place the sliced squash in a medium mixing bowl.
  4. Toss the squash with the coconut oil and transfer it to the basket of your air fryer.
  5. Set the temperature to 400 degrees F for 15 minutes, or until the squash has started to brown.
  6. Remove the squash from the air fryer and transfer it to a serving bowl.
  7. Toss with salt and pepper, and serve warm.


  1. Store any leftovers in a tightly sealed airtight container in the refrigerator for up to 4 days. Re-heat before serving.
  2. OVEN INSTRUCTIONS: If you are using a regular oven, then place your cubes on a baking sheet and bake for 30-35 minutes at 400 degrees F.
  3. This recipe is very forgiving! You can use whatever seasonings you like. I’ve also used cinnamon, Italian seasoning, dried basil, and taco seasoning.
  4. You can use whatever cooking fat you like including coconut oil, butter, ghee, vegan butter, olive oil, or avocado oil.
