Ingredients

- Nonstick cooking spray
- 2 mahi mahi fillets
- 2 teaspoons olive oil
- 1/2 teaspoon sea salt
- 1 ripe mango, peeled, pitted, and diced (about 1 cup)
- 1 jalapeno, seeded and finely diced
- 1/2 onion, finely diced
- 1 lime, juiced
Instructions
- Spray the bottom of your air fryer basket lightly with the nonstick cooking spray.
- Pat each mahi mahi fillet dry with a clean paper towel.
- Then, brush the top of each fillet with the olive oil and sprinkle the sea salt on top.
- Lay the fish inside the basket of your air fryer and set the temperature to 380°F for 8-10 minutes.
- While the fish is cooking, make the salsa. In a medium mixing bowl, combine the mango, jalapeno, onion, and lime juice. Stir to combine.
- When the fish is done cooking, use a fork the check and make sure the inside is flaky and opaque. You can also use an instant read thermometer to ensure that the inside of the fillets reach a temperature of 145°F.
- Serve the fish hot, with a generous serving of the mango salsa on the side.
Notes
- You can double this recipe depending on how big your air fryer basket is.
- You can use whatever type of white fish you like. Mahi mahi is nice because it is juicer and neutral in flavor.
- Store any leftover cooked fish and salsa in an airtight container in the refrigerator for up to 4 days.
