This day from the previous weekend started with a kale smoothie bowl (see a similar recipe) topped with buckwheat groats and molasses:

I got in some summer hiking while it was still reasonably cool with our typical coastal summer fog:
Taking in such beauty creates quite an appetite, amiright? 🙂
After hiking, I ended up at a local beach shack for lunch with friends. Here’s my salad with fresh scallops and mango corn salsa:

Plus, I have to insert a comment here how nice it is to be able to eat at restaurants again, without worrying if everything fits into my overly restrictive way of eating that ultimately did me more harm than good. Yay for recovery!!!
Of course, I still like selecting foods most of the time that are supportive of my health, but it’s not like I choose perfection over eating anymore nor do I let myself feel riddled with guilt for not being perfect. Trying to live up to someone else’s standards (or my own whacked out “goals” are the quickest routes to misery, if you ask me. And, besides all that, eating out with friends is fun!
Anywho, once I got home from my day out, it was time to start dinner.
I recently discovered red palm oil for roasting that is rich in tocotrienols, a nutrient with cancer and neurological-protective benefits. This brand from Nutiva is orangutan-safe, something that can’t be said for most palm oils:
Roasted zucchini, pasture-raised organic turkey, and wilted bok choy for dinner:
Dessert was quick but amazingly delicious with dates and sprouted almond butter (unpictured, sorry!).
