I know! It’s so pretty it hurts, in that “this is so beautiful and I never want it to stop” bittersweet kinda way:
Gah, the weather has been so amazing the past 10 days or so. I can’t even with the views:
Rain is supposedly coming and we REALLY need it, the drought is still severe in California. After all, it takes water to grow this stuff:
But, I wouldn’t be sad if this continued a bit longer:
Not sad. In fact: happy. And very, very grateful.
You should come visit me!!! That’s an open invite from me to the world, ha ha. Just give me a heads up so I can get the guest room ready.
Anywho, onto the food stuff, because this is a food blog and it’s What I Ate Wednesday. My morning smoothie got a change-up after I found frozen blackberries at the store (read my Blendtec review here):
The blackberries are pretty sour, so they got paired with some banana, cherries, and pineapple. The greens included steamed collards and fresh mint (see my dairy-free green smoothie recipes here):
With the weather being so amazing, being inside wasn’t an option. I started dinner early by piling everything into the slow-cooker:
I think I put every vegetable in the house in this thing; the lid barely closed! Lentils were on the bottom, too (see a similar recipe):
Once dinner was set on low to cook while we were gone, Alan and I hit the road for more outdoor time. A short hike and drive up the coast to one of our favorite cafes. Eaten outside, duh:
Dinner was a bowl of those crockpot veggies with some cooked grass-fed bison stirred in, plus lightly sautéed baby bok choy, chopped scallions, and sauerkraut for topping:
Dessert was fresh fruit cut up into bite-sized pieces because, apparently, I am a toddler [editor’s note: forgot to mention a 2nd dessert of a couple of dates and almond butter, mmmm!]:
