Vitamix Tomato Soup (Vegan)
When you want a quick soup recipe, you’ve got to try this Vitamix Tomato Soup. It’s easy to make and tastes like a classic American favorite. This recipe is made in less than 20 minutes and is vegetarian, vegan, and gluten-free.
There’s no need to babysit the stove with this blender tomato soup! I can’t think of anything more comforting or nostalgic than tomato soup. Although my taste buds have evolved from Campbell’s version, I still love a bowl of tomato soup on a cold day or night.
The Vitamix is one of my favorite appliances. It’s powerful enough to make everything from nut butter, dips, and smoothies to hot soups and batters. The best part is you don’t even have to transfer the soup to the stove. If you blend the tomato soup for several minutes, it heats it for you.
Next time you want to reach for canned soup, consider this simple Vitamix soup instead. It tastes delicious and homemade without all the work. You don’t even need a pot!

Key Ingredients
Vegetable broth – Vegetable broth packs in flavor but can be high in sodium. I like to buy reduced-sodium broth for a healthier alternative.
Unsweetened plant milk – Plant milk adds a touch of creaminess. I used almond milk but any plant milk will work just fine. If you’re not on a dairy-free diet, heavy cream or half and half work well too. Leave it out if you don’t want a creamy soup.
Diced tomatoes – You need two 14.5-ounce cans of diced tomatoes or one 28-ounce can. You can also use whole tomatoes like San Marzano if you prefer. Don’t use fresh tomatoes as they won’t have that roasted flavor and your soup will taste like tomato juice.
Tomato paste – Tomato paste thickens the soup and gives it more tomato flavor.
Olive oil – Just a teaspoon of olive oil adds a little bit of creaminess and flavor.
Garlic clove – Garlic has a pungent flavor that mellows once cooked. It adds sweetness and garlicky flavor to this soup.
Seasonings – Salt and pepper bring out the flavor of the soup, while oregano adds Italian flavor. Dried or fresh basil, thyme, or Italian seasoning all work nicely.
Sugar – A small amount of sugar brings out the natural sweetness of the tomatoes. You can leave it out if you avoid added sugars.
Recipe Steps
Step One
In the base of a Vitamix, combine the diced tomatoes.

Step Two
Add the tomato paste to the blender.
Step Three
Add the rest of the ingredients on top.
Step Four
Turn the Vitamix up to high and process for 5-6 minutes, or until the soup has started to steam. If your blender has pre-programmed buttons, you can also just push the soup setting.
Turn the blender off and carefully remove the lid. Taste and feel free to add salt and pepper. Serve immediately.

- For even more flavor, you can use fire roasted tomatoes.
- You can also use one 28-ounce can of diced tomatoes, with the juices.
- If you aren’t vegetarian or vegan, you can use chicken broth instead of vegetable broth (for more protein).
- If you don’t have dried oregano, you can use dried basil, dried thyme, or dried Italian seasoning.
- You can leave out the sugar if you are on a low-sugar diet.
- You can use other dried herbs instead of or in addition to the dried oregano. Dried rosemary or dried thyme would be great too.
- If you aren’t on a vegan or dairy-free diet, you can use heavy cream instead of plant milk.
- If you don’t want to heat the soup in the blender, then you can process it until the mixture is smooth. Then, pour the mixture into a medium saucepan and heat over medium heat until simmering.

Tomatoes are full of lycopene, an antioxidant linked to reducing the risk of heart disease and cancer. They are also packed with vitamin C, folate, potassium, and vitamin K. This recipe also uses plant milk in place of heavy cream for even more nutrients and less fat.
Yes, if you don’t have a Vitamix you can use another blender including a regular blender or an immersion blender so long as it has a powerful motor. Otherwise, the soup won’t steam, but you can still pour it into a pot and heat it up after blending.
