We had our first cool morning here at the beach in California this past weekend, and I was inspired to actually turn on my oven. It was a hot, humid summer which is so unlike our typical cool (sometimes downright cold!) summer weather. 

Anyway, it’s been a relief to have our overcast mornings back, and a freshly-baked gluten-free blueberry muffin was just the way to celebrate. I started with a few simple ingredients, I bet you have most of them in your kitchen right now.

Recipe Steps

  1. Preheat your oven to 375 degrees F. Spray a muffin tin with non-stick spray and set aside.
  2. Combine the wet ingredients in a food processor.
  3. Mix the dry ingredients in a mixing bowl.
  4. Combine the wet and dry ingredients and stir to make your batter.
  5. Pour the batter into your muffin tin and bake for 35-40 minutes.
  6. Enjoy!!!

By the way, am I the only one who immediately thinks of making muffins when a banana gets ripe? In this case, I had three. You can get away with two large ripe bananas for this recipe.

As mentioned above, I used fresh blueberries for this recipe, but you can always de-frost frozen blueberries to use in these muffins. I recommend buying organic blueberries if possible, since berries are a commonly pesticide-sprayed food.

I found that the white chocolate chips melted right into the muffins and added to its sweetness. I will never say that white chocolate is as delicious as dark chocolate, but it sure worked well in these Gluten-free Blueberry Muffins!

Ingredients

  • 3 ripe bananas
  • ½ cup almond milk
  • 1 regular egg or flax egg
  • 1 tablespoon coconut oil
  • 1 ½ cups gluten-free flour
  • ½ cup coconut sugar
  • 1 cup fresh blueberries
  • ½ cup white chocolate chips

Instructions

  1. Preheat your oven to 375°F. Spray a muffin tin with non-stick spray and set aside.
  2. Combine the bananas, almond milk, egg (or flax egg), and coconut oil in the base of  food processor. Process on high for about 15 seconds, or until ingredients are combined. This will be your wet mixture. Set aside.
  3. Next, combine the gluten-free flour, coconut sugar, blueberries, and chocolate chips in a medium mixing bowl. Use a spatula or whisk to combine. This will be your dry mixture.
  4. Pour the wet mixture into the dry mixture and use a spatula to mix together.
  5. Divide the muffin batter between the muffin tin wells. Place the muffin tin in the oven and bake for 35-40 minutes.
  6. Once the muffins are done baking, transfer them to a cooling rack before serving.
  7. Store any leftover muffins in the refrigerator or the freezer.

flax egg is made by mixing 1 tablespoon of ground flaxseed with 3 tablespoons of water
