Happy Healthy Vegan Friday! It’s definitely that time of year in the blogosphere when pumpkin recipes abound. While I don’t love the flavor of pumpkin by itself (I know, it’s a travesty!), mix it with some cinnamon or chocolate and I’m good to go.

As I’ve mentioned probably too many times, I’m headed to NYC today until a week from Saturday. It will be my first time in the city as a vegan and I can’t wait to try out all the restaurants and shopping; I’ve been researching and mapping things out like crazy!
