Instant Pot Pork Roast (Sweet & Sour)

Learn how to make a juicy Instant Pot Pork Roast that has sweet and sour flavors. The tender roast pulls apart and can be used in tacos, salads, or on a sandwich. Everyone loves this pulled pork recipe.

Ingredients

  • 2 tablespoons cooking oil (I used avocado oil)
  • 1 onion, diced
  • 1 jalapeno, cored and diced, with seeds removed
  • 2 garlic cloves, minced
  • 1 20ounce can crushed pineapple, with the juices
  • 1/2 cup orange juice
  • 1/4 cup apple cider vinegar
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground cumin
  • 2 pounds pork roast
  • Sliced green onions or finely chopped cilantro (optional, for serving)

Instructions

  1. Press the sauté button on a 6-quart Instant Pot and drizzle in the oil. Let the oil heat up for a few minutes.
  2. Then, add the onion and jalapeno and let cook for 2-3 minutes, stirring occasionally.
  3. Add the garlic, pineapple, orange juice, vinegar, salt, pepper, and cumin, and stir to combine.
  4. Cancel the sauté function and then use tongs to place the pork roast on top of the other ingredients.
  5. Lock on the lid and set the cooking time to 30 minutes at high pressure. When the cook time is complete, let the pressure come down naturally for 10 minutes. Then, use the quick release to get rid of any remaining pressure.
  6. Carefully remove the lid. Use two forks to shred the pork before serving.
  7. Serve hot, with green onions and chopped cilantro on top for garnish (optional).

Notes

  1. Store any leftovers in a tightly-sealed airtight container for up to 4 days.You can double this recipe, but you may need to slice the roast to make sure it fits inside the bottom of the pot.

  3. The seasonings for this recipe are very versatile. Feel free to use your favorites including garlic powder, balsamic vinegar, black pepper, or chili powder. You can also add some brown sugar if you want more sweetness.
  4. You don’t need to use the metal trivet on the bottom of the Instant Pot for this recipe. The veggies will hold the roast and keep it from burning.
