If you’re new to making vegetable juice at home, then you’re going to love this tangy and slightly sweet Lemon and Ginger Green Juice recipe. It uses simple ingredients that are affordable and easy to find.
I’ll show you how to make this green juice recipe in either a juicer or a blender.
Why You Need This Recipe
- This green juice recipe is primarily made using vegetables, but it includes lemon and apple to add brightness and sweetness.
- This is a great “beginner juice” recipe because it’s easy to make and has a mild flavor.
- All of the ingredients in this juice are incredibly healthy and full of antioxidants. This juice is great for the immune system because it’s high in vitamin C.
Key Ingredients
- Cucumber is a perfect vegetable to use in green juice. It’s full of water and it also includes nutrition (I like to use English cucumbers). You can peel the cucumber or leave the peel on (some people find that the peel adds a bitter taste to the juice). See my related Cucumber Juice Recipe.
- Celery is another great veggie for making green juice. It has natural sodium and adds a lot of nice flavor. See my recipe for just Celery Juice.
- Lemon adds brightness and lots of vitamin C to homemade vegetable juice. Peel the lemon to prevent the juice from becoming bitter.
- Fresh ginger adds tang and helps with digestion. Peel your ginger with the back of a spoon or a knife before juicing it. You may also like this Pineapple Ginger Juice!
- Green apple adds sweetness without adding too much sugar. I like using a Granny Smith apple in this healthy green juice recipe.
- Parsley adds even more nutrition to this green juice recipe. Parsley has a mild flavor but is so nutritious.
You can adapt the ingredients to whatever you have in your fridge or to your own preferences, but I really love this combination! It is similar to my Anti-Inflammatory Juice Recipe with ginger and turmeric.

Recipe Steps
Let me show you how easy it is to make this simple and best Green Juice Recipe using a juicer or a blender.
Step One
Wash and prep your veggies and fruit. Remove the peel from the lemon.
To make this green juice in a blender, simply combine the ingredients in the pitcher of a high-speed blender, along with 1/4 cup of water. You can also use a food processor if you like.
See the recipe card at the end of this post for the exact measurements.
Step Two
If you are using a juicer to make this green juice, simply feed the produce through the juicing tube of a juicer.
If using a high speed blender, blend the ingredients until smooth.
Step Three
If you used a blender, then you’ll need to strain the juice through a nut milk bag or a fine-mesh sieve to get rid of the pulp (or save it and make green juice crackers).
Or, you can serve the blended veggies as green smoothies (just pour and serve). But, for fresh juice, the mixture will need to be strained.
Step Four
Serve your green juice immediately.
This Lemon and Ginger Green Juice recipe with green vegetables is my favorite right now. I hope you love it too!
Potential Health Benefits of Drinking Green Juice
I’ve been making green juices for almost a decade now, and enjoying the addition of vitamins and antioxidants for my health. Some people have asked me why juicing is a good idea when you could just eat all of those vegetables?
My answer is that there’s no way most people can comfortably digest the same amount of vegetables by chewing them as they can by juicing them. Most people just can’t handle that much fiber without their digestive system getting upset.
By juicing, you get all of the antioxidants, but hardly any of the fiber. Don’t get me wrong, I still eat plenty of vegetables and think that you should too, but I believe that green juices can enhance our intake of antioxidants from green veggies.
The science supports this theory as well! This study showed a positive effect on cardiovascular health in people who consumed fruit and vegetables juices. Scientists believe this is because of the antioxidants in the juices from fresh fruit and veggies.
Green Juice Recipe Tips
- The apple is optional, and can definitely be left out if you prefer your green juice less sweet. Otherwise, I think you’re really going to like this refreshing ginger lemon juice.
- It’s ideal to serve juice immediately after making it since the vitamin C will start to diminish almost immediately. If you have extra juice that you want to have later, just pour it into a glass jar or Mason jar and cover with an air-tight lid. Store any leftovers in the refrigerator for up to 4 days in your airtight container.
- Look for organic produce at the grocery store or farmers’ market whenever possible, especially if you use any items from the Dirty Dozen list.
Recipe FAQs
There is no evidence that juice is more nutritious than eating fruits and vegetables, but juicing is a great way to increase your intake of the micronutrients found in fresh produce. It’s also nice because you can get nutrition quickly into your system as opposed to having to chew and digest the whole vegetables.
There are pros and cons to doing a juice cleanse. It certainly isn’t right for everyone. Learn more about juice cleansing.
I’ve had my Omega juicer for almost ten years now and it still works like a champ (this is almost the exact one that I have). You can learn more in my articles about the best juicer for a cleanse or the Best Ginger Juicer.
I would try to use a masticating type juicer as opposed to centrifugal juicers which usually don’t handle hard vegetables very well during the juicing process.
So many things! Add the leftover juice pulp to muffins or other baked goods. Or, try making my Green Juice Crackers.

I really need to start juicing more! this sounds so delicious
It’s an effort, but I think it helps with improving micronutrient status. There are so many great juice bars around, too, but I can’t get over the price. 🙂
Oh, that looks so refreshing and healthy. I could really go for a glass right now 🙂
Me too! I think I’m going to make some tomorrow morning. Have a great weekend, Stacey!!!
This sounds delicious! I love all of the celery and cucumber in there, plus the little bit of spice from the ginger and sweet from the apple. Yum!
Thanks, Emily!!! My husband had a cold last week and he said he like the spicy-ness from the ginger on his sore throat. Take care!
This is going on repeat in my house, all the germs going around this time of year. This will totally kick some flu butt! Thanks!
Right?! My husband was sick last week but somehow I didn’t get sick. Stay well, Cristina!!! XOXO.
We all need a little extra vitamin C right now with the crazy colds going around – great idea to pack it into this juice! I’m in love with everything lemon-ginger lately. Just had lemon-ginger green tea this morning!
Thanks, Dana!!! Your tea sounds delightful. Stay warm and dry! XO.
You should try Manchester, UK. The sun actually came out the other day and we all rejoiced! I juice all the time, my go-to is quite similar to this but without the pepper and it is absolutely delicious! I would be lost without my juicer. Great recipe, thanks for posting it!
Hi Mark! I can only imagine how cold it is in Manchester right now! Stay healthy this winter. Spring is only 50 days away! 🙂
I agree with you on the weather, it was really cold in California last week when I was there. People kept asking me if it was cold compared to Montana, and I thought it really was quite chilly, I think because of the humidity. I only had 1 green smoothie the whole week, so I could do with some of this lemon ginger juice to give me a boost!
Thanks, Kari! Now I don’t feel like such a wimp if a Montanian agrees that it was cold here. 🙂
What a refreshing start to the day! Sounds great!
Thanks, Renee! XO.
My my! Looks so refreshing! Lemon and ginger are my absolute favorite, I need to bookmark this recipe to try soon.
Oooh my goodness! Lemon and ginger are two of my favourite things. Carrie I’m moving in with you 😉
Georgina, I bet we will have a lot of fun cooking together when you move it! 🙂 XOXO.
We had green juice also at the place we just stayed in Puerta Valarts. Theirs had pineapple nin it as well as cucumber, spinach, lemon, ginger . It was yummy.
Ohhhh, that sounds like a great combo too, Nancy! I’ve never tried pineapple in a green juice but I bet it was so yummy and tropical!
