This macadamia sweet cream sauce is perfect as a healthy dessert topping. It’s vegan, dairy-free, and sweetened with dates.
I’ve been experimenting with some new, healthier recipes using summer fruit. So far, I haven’t made any winners that I want to post. They look pretty tasty, though, so I’ll share the photos and then give the recipe for my cream sauce that is delicious.
First, there was my raw nectarine and plum pie:
The crust fell apart and the whole thing got watery. 🙁
Next, I tried a crumble with peaches. Before I went vegan, I was the master crumbler! My recipe used butter and sugar, though. Now that I’m trying not to add refined fats and sugars to my recipes, I simply left out them out. The result? Not so great, either. It was dry and not sweet enough:
What did work though was the macadamia sweet cream sauce I made for the topping:
It was just sweet enough using date sugar with a hint of vanilla. It transformed the crumble into a luscious, decadent treat. Yum! Here’s the recipe:

The cream sauce looks amazing! I can just imagine how yummy that is 🙂
Congrats on figuring out and pursuing such an awesome path! What an awesome combination–the public health and RD. Follow Your Bliss 🙂 That’s what my mom would say—whatever you like to do, do that.
I am very passionate about food, and I also love the other aspects of wellness (although food is the most tangible thing to help people with). I teach nutrition and there really is not much better than seeing college age students actually become interested in improving their food choices! I have one group of employees I’ve been working with for three years…the progress (even though at certain times seemed dismal) is so rewarding for all of us!
Looking forward to following your journey!

Hi Lisa, your mom is so right, “Follow Your Bliss” is a phrase to live by. It’s taken me a long time to figure out what my “bliss” is, but never late than never, right? 🙂

Congratulations Carrie!!
Where do you find date sugar?
Carrie says
Hi Robyn! Date sugar is a bit tough to find but I found it at a local natural foods store. You could substitute whole dates in this recipe, you might need a little more soymilk to thin it out.

Thanks Kate! I’m really excited to become an R.D. but I wasn’t sure if I could make it happen. Now I just have to do the work…. 🙂

Mmm, the cream looks great.
I see you’re using date sugar – so that means whole dried dates are ok too, right? You might try pulsing a few of those into your crumble topping next time to make it stick together. 🙂
Carrie says
Hi Amber, I heard about date sugar on Dr. Fuhrman’s website. It’s basically dehydrated dates so it’s slightly processed. I usually use whole dates in my sweet recipes, but I was too lazy to pit them for this recipe. Great idea to pulse the dates into my topping though, thanks!

this looks so good! i have yet to make a nut cream….my problem is that the rest of the family is not 100% there with me on raw foods or even vegan….so if i make a nut cream for a dessert and i am the only one eating it, i end up having it for days and i like my variety too!….but i am easing the family into everything…i made gluten free brownies, and had no problem eating those for days!…so maybe nut cream will be the same experience??!! : )
Carrie says
Hi Eva, thanks for the comment. That’s a tough one when the rest of your family isn’t vegan. It’s hard for me to have treats around the house especially if I was the only one eating them. At least I have my husband who gobbles up anything I make. 🙂 Keep up the good work!

maybe try coconut oil as a fat, its a healthy one!
I have heard that it can be hard as an ethical vegan to go to nutrition school, but there are some programs out there that are more supportive of animal-free eating. i would have a hard time listening to people talk about animals as food.

I totally agree with you about being vegan and going to a traditional university to learn about nutrition. I’m going to do my best to point out the vegan point of view whenever I can on my journey.
