If you’re like me, then you love eating salads, but sometimes get sick of eating the same combination. That is exactly why it’s important to change up your salad fixins’! Dr. Fuhrman’s motto is “the salad is the main course” and I heartily agree, although I have to admit that I usually top out at one real salad a day. I try to get my greens in other ways including green smoothies and vegetable-blended soups.
Here are some of my recent salads eaten at lunch. These all filled me up but sometimes I finish my meal with some leftover smoothie or some fresh fruit. My husband usually has a Vegan Chocolate Milkshake or a similar fruit-based smoothie for dessert and it holds him over until dinner.
This one was pretty typical for me and included romaine, creamy avocado dressing, leftover roasted brussels sprouts, crumbled tempeh, chopped bell pepper, chopped onion, goji berries and about 1/2 of a small avocado.
This one was a little different because I started with a base of leftover pasta warmed in the microwave and topped it with raw chopped broccoli, romaine, chopped peppers and onions and some avocado. The warm pasta on the bottom was really comforting and delicious.
This was a salad I pre-made for a lunch on the go. It had my typical romaine and chopped vegetables, but I changed it up by spiraling some zucchini and onions (click here to read about my spiralizer). I paired this salad with some leftover smoothie in a thermos and it was filling and fun to eat.
Lastly, here is the salad I had yesterday that used up all of my leftovers from the week including the last of the brussels, spiraled zucchini and some brown rice I had used for one of my dinners.
I think as long as you include some raw and possibly some cooked vegetables in your salad, then you are on your way. Some of my must-have ingredients also include: avocado, nuts, grains and very often beans or crumbled tempeh.

This weekend I am off to Los Angeles for another baby shower for my friend who is due in December. Even though I didn’t plan this one (click here to read about the vegan-themed baby shower I threw a few weeks ago), I heard through the grapevine that the shower tomorrow is going to be catered by Real Food Daily, one of my absolute favorite vegan eateries. I’m so excited to eat yummy food!
