I don’t know about you, but popsicles were a huge highlight of my childhood summers. I’ll never forget the feeling of biting into an icy and sweet treat that was so refreshing on a hot summer day.

While the popsicles of my childhood were filled with refined sugars and artificial colors, this healthy version is made with pure pomegranate juice, a squeeze of fresh lime, and absolutely no added sugars.

If you’ve never made homemade popsicles before, then now is the time to start.

  • You can either order your own BPA-free popsicle molds (you’ll need a set of two for this recipe), or you can just use dixie cups and wooden sticks.

Recipe Steps

Unlike most homemade ice cream recipes that often need to be churned before freezing, popsicles really just need to be poured into the molds and frozen for several hours. It’s really that simple.

Step One

The first step is to decide what type of popsicle you want to make. You can follow my recipe, or you can feel free to get creative. You’ll need about 2 cups of juice in total.

Step Two

Combine the pomegranate juice and lime juice in a pitcher, stir, and pour the juice into your popsicle molds.

Step Three

Carefully place your popsicle  molds in your freezer and let them sit for about 4 hours. Then, remove them from the molds and serve.

Recipe Tips & Substitutions

  • The pomegranate seeds (also called arils) are just for decoration in my photos, but they could be added to the juice to add texture to the popsicles.
  • If your popsicles are in the freezer for longer than 8 hours, you may need to let them sit on the countertop for about 5 minutes before removing them from the molds. If you still have difficulty, run them under lukewarm water for a few seconds and then remove them from the molds.
  • You can easily double or triple this recipe depending on how many molds you have.

Yes, but make sure that your juice is naturally sweet, otherwise they may not be sweet enough for kids to enjoy.

Are these popsicles keto-friendly?

Each of these popsicles has approximately 37 calories, 9.4 grams of carbohydrate (with 8.1 grams coming from natural sugars), and .4 grams of fiber. So, it is really up to you to decide if these meet your dietary restrictions.

What does pomegranate juice taste like?

It is delicious and naturally sweet, with a little bit of tartness. I would probably liken it most to cherry juice.

What if the popsicles aren’t sweet enough for kids?

You can always whisk in a few tablespoons of raw honey or maple syrup to sweet up the popsicles even more (although this will increase the sugar content significantly).

Ingredients

Instructions

  1. Combine the pomegranate juice and lime juice into a pitcher. Give the juice a stir.
