Here we go Wednesday, otherwise known as WIAW: What I Ate Wednesday)!
Okay, so we’re not officially in summer yet, but close enough, IMHO. Anywho, the day of summer eats I’m featuring today started with this easy chia pudding made with my homemade date-sweetened hemp milk, cinnamon, and blueberries (make it the night before, bam! you’re good to go):
I get my tea ready to go the night before, too. My current mix includes Yerba Mate and Pu-erh (review coming at some point):
Brewed in the morning and sipped with a flowery view:
Dinnertime was cauliflower mash, wilted bok choy, and baked wild Alaska salmon with lemon:
Dessert was this year’s first batch of homemade non-dairy ice cream, topped with a special coconut oil/cocoa powder mixture (recipe forthcoming!):
