Tomato Juice Recipe Using Fresh Tomatoes

Fresh Tomato Vegetable Juice is a healthy and tasty beverage that is the perfect way to use up extra tomatoes and veggies from the garden. Serve it chilled or over ice for a refreshing and nutritious drink.

Ingredients

  • 6 medium tomatoes, cored and quartered
  • 1 celery stalk
  • 2 carrots
  • 1/4 teaspoon salt
  • 3/4 cup water (if using a blender)
  • 1/2 teaspoon Tabasco sauce or your favorite hot sauce (optional)
  • Ice cubes (optional, for serving)

Instructions

  1. Cut the produce into large pieces that will fit through the feeding tube of a juicer. If you will be using a blender to make your juice, then cut your produce into smaller pieces than if you are using a juicer.
  2. If you are using a juicer, then run the pieces through the juicer. Collect the juice and stir in the salt and Tabasco sauce. Chill or serve right away (I like it best served cold over ice cubes).
  3. If you are using a food processor or blender, add the tomatoes, celery, and carrots to the base. Add ¾ cup of water. Blend or process on high for 20-30 seconds, or until the mixture is smooth.
  4. Then, pour the blended juice through a nut milk bag, squeezing it from the top down to drain the juice into a pitcher. Alternatively, you can pour the blended mixture through a fine mesh sieve, using a spatula to gently push the liquid through the sieve. Discard the collected pulp, or save it and use it for another purpose.
  5. Stir in the salt and Tabasco sauce (optional) into the tomato juice. Chill the juice before serving, or serve it right away over ice cubes.

Notes

  1. Fresh juice is best served right after it’s made. But, it can be stored in a covered container in the refrigerator for up to 4 days.
  2. Try to use ripe tomatoes for this recipe for the most flavor.
  3. If you don’t want any spiciness to the flavor of your juice, leave out the hot sauce.
  4. This recipe is very versatile! You can adjust or adapt the types of vegetables that you blend with the tomatoes. Feel free to use additional ingredients such as flat-leaf parsley, cilantro, beets, and even an apple to add additional sweetness.
