These Vegan Cherry Coconut Popsicles are such a delicious and refreshing frozen treat. This recipe is dairy-free, but is so creamy! This popsicles recipe is great for kids and adults.

It’s been so hot already this summer, so I decided to make some super easy popsicles. I just blended together a can of light coconut milk, cherries, vanilla, and maple syrup.

This treat is so perfect for a hot summer afternoon or evening. If you don’t have frozen sweet cherries on hand, you can actually use whatever berry or fruit you like, including strawberries, mango, peaches, blueberries, or pineapple.

Also, if you prefer to use a whole foods sweetener, you can leave out the maple syrup and use 1/2 cup of pitted dates instead.

Recipe Steps

Step One

Ideally, you’d have some molds in which to pour the mixture and make a traditionally shaped popsicles. I got this package of two BPA-free sets from Amazon that work great! I use them year after year. 

If you don’t have popsicle molds, you can use small cups and spoons or wooden sticks.

Step Two

Blend the coconut milk, frozen cherries, vanilla, and maple syrup.

Step Three

Divide the mixture between the molds and freeze for at least 4 hours. Serve your vegan popsicles cold.

FAQs

Can I use full fat coconut milk instead of light?

Yes you can, but the nutrition info will be different than what I show on the recipe card.

What popsicle molds do you have?

I have this popsicle set from Amazon.

Can I use a milk other than coconut milk?

Yes, you could use oat milk, cashew milk, dairy milk, hemp milk, or whatever type you like.

How long will these take to freeze?

Ideally, at least four hours, but you might be able to get away with three hours of freeze time.

Can I use a different sweetener besides maple syrup?

You can blend dates with the mixture (you’ll need about 1/2 cup). Or, you can use whatever sweetener you like.

Ingredients

Scale
  • 1 13.5-ounce can of light coconut milk
  • 2 cups frozen sweet cherries
  • 1/2 teaspoon vanilla extract
  • 1/2 cup maple syrup*

Instructions

  1. Combine the coconut milk, frozen cherries, vanilla, and maple syrup in a blender and process until smooth.
  2. Pour the cherry-coconut mixtures into your popsicle molds.
  3. Freeze for at least four hours, and up to 24 hours.

Notes

  1. *If you prefer to use a whole foods sweetener, you can leave out the maple syrup and use 1/2 cup of pitted dates instead.
  2. If you don’t have popsicle molds, you can also pour the mixture into plastic or paper cups with a spoon or wooden stick.
  3. These popsicles will last in the freezer for up to several weeks. Defrost them slightly at room temperature (4-5 minutes) before serving.
