These Cherry Popsicles made with coconut milk are such a delicious and refreshing frozen treat. This recipe is dairy-free, but is so creamy! Use fresh or frozen sweet cherries.

Ingredients

  • 2 cups frozen sweet cherries
  • 1 cup full-fat coconut milk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup maple syrup

Instructions

  1. Combine the frozen cherries, coconut milk, vanilla, and maple syrup in a blender or food processor and process until smooth.
  2. Pour the cherry-coconut mixtures into your popsicle molds.
  3. Freeze for at least four hours, and up to 24 hours.

Notes

  1. Want a version using a whole foods sweetener? Leave out the maple syrup and use 1/2 cup of pitted dates instead.
  2. Try dipping your frozen cherry popsicles in some melted chocolate and top with some shredded coconut for a truly gourmet and decadent version!
  3. Store any leftover popsicles in the freezer for up to several weeks.
  4. If you are using fresh cherries instead of frozen cherries, you’ll need to freeze the popsicles a little longer, probably 6-8 hours, before serving.
