Rich Carrot Ginger Lentil Soup

Here is a rich and flavorful Carrot Ginger Lentil Soup that includes plant-based protein from the lentils. This is a great lunch recipe on cold days.  The leftovers are delicious too.

– carrots – onion – red lentils – fresh ginger – curry powder – reduced-sodium            vegetable broth –  full-fat canned            coconut milk – lemon, juiced

INGREDIENTS:

Combine carrots, onion, lentils, ginger, curry powder, & broth in an Instant Pot.

Cook on high for 6 minutes. When cooking is done, allow pressure to come down for 10 minutes.

Stir in coconut milk & lemon juice. Blend until smooth.
