Crispy potato fritters

This is the perfect comforting and delicious recipe for using up leftover mashed potatoes. These Potato Fritters with Chives are creamy with a golden crust. Serve the fritters as a satisfying side dish that is made vegetarian and gluten-free.

Ingredients

– prepared mashed        potatoes, chilled – flour  – fresh chopped chives – sea salt – olive oil – sour cream (optional)

In a large bowl, combine mashed potatoes, ½ c of flour, egg, chives & sea salt.

Step 1

Mix ingredients to make batter. Add flour until batter is thick enough to stick together.

Step 2

Use hands to form fritters. Pat down like thin burger patties.  Place on a plate.

Step 3

Heat oil in a skillet. Place fritters in the pan without overlapping. Cook until crisp.
