Crockpot Ham  & Potato Soup

Use your leftover cooked ham to make this tasty Crockpot Ham and Potato Soup. It is rich and creamy with  no dairy.

Ingredients 

– Russet potatoes – onion – carrots – celery stalks – ham steak – reduced-sodium           chicken broth – ground black pepper – all-purpose flour  – whole or coconut milk – chopped green onions          (optional)

In the base of a slow cooker, add potatoes, onion, carrots, celery, ham, chicken broth & pepper. 

Step 1

Cover & cook on low for 7 hours.  Remove the lid & mash the potatoes with the vegetables & ham.

Step 2

Stir in the flour & milk. Cook for an additional 15 minutes to allow the soup to thicken.

Step 3

Remove the lid  & serve hot.
