Dairy-Free Chicken Broccoli Casserole

Here's how to make a creamy Dairy-Free Chicken Broccoli Casserole that is a great weeknight meal.

– olive oil – onion – garlic cloves – boneless, skinless              chicken cutlets – reduced-sodium              chicken broth – uncooked long-grain            white rice – fresh broccoli florets – raw cashews – sea salt – nutritional yeast – garlic powder – water

INGREDIENTS:

Add broth, rinsed rice & broccoli to a greased casserole dish.

In a large skillet, sauté onion, garlic & chicken until the outside of the chicken starts to cook.

Transfer chicken & onion mixture into the baking dish.  Cover with aluminum foil & bake at 400°F for 30 minutes.

In a food processor, combine the cashew nuts, sea salt, nutritional yeast, garlic powder & water.  Blend until smooth & creamy.

Pour the cashew sauce over the cooked casserole.  Bake uncovered for 20 minutes.  Allow to cool before serving.
