Crockpot Chicken and Quinoa

Try this one-pot Crockpot Chicken and Quinoa dinner for an easy and healthy meal. This is a great meal prep recipe.

– olive oil – uncooked quinoa – onion – carrots – celery stalks – garlic cloves – reduced-sodium          chicken broth – sea salt – ground black pepper – Italian seasoning – boneless, skinless         chicken thighs – fresh parsley

Ingredients:

Step 1

Add oil, vegetables, seasonings, broth & quinoa to slow cooker.  Stir to combine. 

Step 2

Place the chicken thighs on top of the vegetable and quinoa mixture.

Step 3

Cook on low for 8 hours.  Transfer cooked chicken to serving plates.

Step 4

Stir vegetables & quinoa to serve with the chicken. Top with parsley & enjoy!
