Gluten-Free Zucchini Bread

Zucchini bread is a classic summer recipe, and this gluten-free version is just as delicious as the original!  The bread is perfect for snacking on or packing in a lunchbox.  Plus, it's easy to make and only requires a few simple ingredients.

Ingredients

 – nonstick cooking spray – grated zucchini  – gluten-free flour – coconut sugar – ground cinnamon – baking powder – baking soda – sea salt – eggs – ghee or butter – vanilla extract

Preheat oven & spray a loaf pan with nonstick cooking spray.   Combine zucchini & dry ingredients in a bowl.

Step 1

Add the wet ingredients to the dry ingredients & stir.  

Step 2

Pour into mixture into loaf pan & bake for 55-60 minutes. 

Step 3

Allow to cool before serving.  Enjoy!
