Delicious  Sweet Potato Muffins

These gluten-free and vegan Chocolate Chip Sweet Potato Muffins are a delicious and nutritious treat that can be served for breakfast or taken  on-the-go.  Use your leftover baked sweet potatoes to make these yummy muffins.

– nonstick cooking spray – mashed sweet potato  – coconut oil – chia or flax eggs  – maple syrup – unsweetened almond          milk – vanilla extract – rolled oats – baking flour  – baking powder – baking soda – ground cinnamon – sea salt – walnuts – dairy-free dark          chocolate chips

INGREDIENTS:

STEP 1

Combine mashed sweet potato, coconut oil, flax or chia egg, maple syrup, milk & vanilla.  Stir to combine.

STEP 2

In a large mixing bowl, combine oats, flour, baking powder, baking soda, cinnamon, salt, walnuts & chocolate chips. Stir to combine.

STEP 3

Combine the wet & dry ingredients. Divide between muffin wells & bake until golden brown.
