Instant Pot Mahi Mahi is tender and perfect for an easy one-pot meal. This fish gets pressure cooked with veggies and coconut milk.

Ingredients

– Mahi Mahi fillets  – bell peppers – onion, chopped – can full-fat coconut milk – reduced sodium vegetable broth – coconut sugar – sea salt – ground black pepper – Cooked rice or cauliflower rice, for serving

In the bowl of a 6-quart or 8-quart Instant Pot, combine the chopped fish, bell peppers, onion, coconut milk, vegetable broth, coconut sugar, sea salt, and black pepper.
