Instant Pot Thai Chicken Curry

– cooking oil – onion – garlic – carrots – red bell pepper – boneless, skinless        chicken breasts – ground ginger – brown sugar

INGREDIENTS: (continued)

– green curry paste  – reduced-sodium        chicken broth – canned coconut milk – arrowroot powder – lime – fresh cilantro  – cooked rice

Sauté the vegetables.


Add chicken and seasonings & stir to combine.


Stir in the broth & set to pressure cook for 8 minutes.


Stir in coconut milk & arrowroot while sautéing.  You are ready to serve!
