Best Sweet Potato and Beet Salad

Looking for a new and delicious salad recipe to add to your repertoire? This sweet potato and beet salad is easy to make, healthy, and sure to please even the pickiest of eaters.


For the salad: – sweet potatoes – medium beets – olive oil – baby spinach – red onion, thinly sliced – sunflower seeds For the dressing: – olive oil – Dijon mustard – maple syrup – sea salt

Peel & dice the sweet potato and beet evenly and roast on a prepared baking sheet.


While the veggies roast, whisk together the dressing so the flavors have time to combine.


Add the spinach, onion & sunflower seeds to a large salad serving bowl with the slightly cooled roasted veggies.


Top with salad dressing & toss to combine. Serve immediately!
