Vegan Blackberry Muffins

Vegan Blackberry Muffins just scream summertime! They are moist and delicious for dessert or a snack. These are made dairy-free and egg-free with a gluten-free option

Ingredients:

Nonstick cooking spray 1 cup blackberries 1 cup  almond milk 1 tablespoon lemon juice 2 cups flour (regular or gluten-free) 2/3 cup sugar 2 teaspoons baking powder 1/2 teaspoon baking soda 1/3 cup olive oil 1/2 teaspoon vanilla extract

Step 1

Mash the blackberries with the back of a fork.

Step 2

Add ingredients to bowl with blackberries.

Step 3

Stir batter until smooth.

Step 4

Pour the batter into a muffin tin.

Step 5

Bake at 375F for 25 minutes. Allow to cool before serving.
