Vegan Lemon Poppy Seed Muffins

Vegan Lemon Poppy Seed Muffins are perfect for a quick breakfast or snack, and they are so easy to make.  You will love the sweet and tangy flavor of the lemon poppy seed combination.

Ingredients:

– all-purpose               baking flour – coconut or white             sugar – poppy seeds – baking powder – sea salt – unsweetened               almond milk – fresh lemon zest – lemon juice – unsweetened             applesauce – coconut oil – vanilla extract

Step 1

Combine the dry ingredients in a bowl & set aside.

Step 2

Combine the wet ingredients in a mixing bowl.

Step 3

Pour wet ingredients into dry & combine well.

Step 4

Divide the batter between the muffin wells & bake for 15-18 minutes. Allow to cool before serving.
