Vegan Summer Rolls with Peanut Sauce

Anytime is the perfect time to enjoy fresh, healthy vegan summer rolls! These light and refreshing rolls are perfect for a quick and easy meal.

Ingredients

– spring roll rice paper        wrappers  – red bell pepper – yellow bell pepper – purple cabbage – carrots – fresh mint leaves – natural peanut butter – coconut aminos  – maple syrup – sesame oil – water

Dip each wrap in warm water individually.

Step 1

Stack long strips of veggies just past the center of the wrap.

Step 2

Gently fold the wrapper around the veggies, tucking in the edges.

Step 3

Whisk the sauce ingredients until smooth & place in a bowl for serving.
