Vegan Zucchini Potato Soup

Zucchini potato soup is a vegan, healthy soup that is perfect for any occasion! This recipe is easy to follow and requires simple ingredients.

INGREDIENTS:

– olive oil – onion – garlic cloves – zucchini – Yukon gold potatoes – reduced-sodium          vegetable broth – unsweetened Greek          plant-based yogurt – sea salt – ground black pepper

Heat oil in a Dutch oven and sauté garlic and onion over medium heat.

Add in zucchini, potatoes, and broth.

Bring soup to a boil and then simmer until the potatoes are soft.

Carefully blend the soup using an immersion blender.

Stir in yogurt and season to taste. Enjoy!
