Copycat Erewhon Kale Salad

You've never had kale salad like this before! This one has an explosion of flavors and is a copycat recipe from the chic Los Angeles grocery store.

Ingredients

– curly kale – olive oil – lemon, juiced – yellow or grainy                              mustard –  maple syrup – sea salt – ground black pepper – white beans – avocado – hulled pumpkin seeds – hemp seeds

Use your hands to remove the leaves from the kale stems & place on a cutting board.

Step 1

Roughly chop the leaves  & place them in a large mixing bowl.

Step 2

In a small bowl, combine olive oil, lemon juice, mustard, maple syrup, salt & pepper. Whisk to make dressing.

Step 3

Pour dressing over the kale & use hands to massage the dressing into the leaves.

Step 4

Add beans, avocado, pumpkin seeds & hemp seeds. Toss gently to combine.

Step 5

Serve immediately, or cover & chill in the refrigerator before serving.
