Gluten-Free Pasta Salad

Gluten-Free Pasta Salad is a fresh and healthy recipe that you can serve for lunch or dinner. You can use seasonal ingredients for the veggies.


– water – gluten-free pasta  – sea salt – olive oil – onion – garlic cloves – button mushrooms – cherry tomatoes – marinated artichoke          hearts – balsamic vinegar – feta cheese

In large pot, bring water to a boil.  Add pasta & sea salt.  Cover.  While the pasta is cooking, heat olive oil in a skillet over med heat.

Step 1

Add vegetables & garlic. Cook until soft.  Turn off heat & set aside. Drain pasta once cooked.

Step 2

Transfer pasta to a large bowl.  Add cooked vegetables & balsamic vinegar.

Step 3

Toss pasta & veggies together with extra olive oil and feta.  Serve warm, at room temperature, or chilled.
