Vegan  Panna Cotta

Vegan Panna Cotta is a dairy-free version of the classic Italian dessert. Make this for a special occasion!

INGREDIENTS:

For the panna cotta: – full-fat coconut milk – sugar – agar agar powder – vanilla extract For the strawberry sauce: – frozen strawberries – water – sugar – lemon juice

In a saucepan over med heat, whisk together coconut milk, 1/4 cup of sugar, agar agar powder & vanilla.

Bring mixture to a boil, then reduce heat to low. Simmer for 3 minutes.

Remove from the heat & pour mixture into ramekins. Refrigerate for at least 2 hours.

When ready to serve, make the strawberry sauce in a small saucepan.  Combine the frozen strawberries, water, 1 tablespoon of sugar & lemon juice.

While the mixture comes to a simmer, smash the strawberries & cook until soft. Remove saucepan from heat.

Serve the panna cotta topped with fresh strawberry sauce.  Enjoy immediately.
