Gluten-Free  Banana  Muffins

These Banana Muffins are sweet and tender. This gluten-free recipe is great for breakfast for dessert. And, guess what? They have a sneaky addition of carrots!

Ingredients

– Nonstick cooking spray – gluten-free baking flour (I like Bob’s 1-to-1 Gluten-Free Baking Flour) – tightly-packed shredded carrots  – baking powder – baking soda – ground cinnamon – eggs – mashed banana  – maple syrup – vanilla extract – coconut oil or ghee, melted

In a large mixing bowl, combine the flour and shredded carrots. Stir to combine.

Step 1

Add the baking powder, baking soda, and ground cinnamon. Stir and set the bowl aside.

Step 2

Add the eggs, mashed banana or applesauce, maple syrup, vanilla extract, and melted coconut oil or ghee. Stir to combine.

Step 3

Pour the wet ingredients into the dry ingredients and stir to combine. Divide the batter between the muffin wells.
