Gluten-Free Lemon Cake

Gluten-Free Lemon Cake is a great dessert for spring or summer events. Everyone loves this lemon dessert.

INGREDIENTS:

– Nonstick cooking spray – unsweetened almond milk* – apple cider vinegar – gluten-free baking flour  – cane sugar or coconut sugar – baking powder – sea salt – lemon zest  – coconut oil – eggs – powdered sugar – lemon juice

In a large mixing bowl, combine the flour, sugar, baking powder, salt, and lemon zest. Stir or whisk to combine.

Into the mixing bowl, add the almond milk mixture, coconut oil, and eggs. Stir to combine.

Pour the batter into your baking dish and place the dish in the oven. Bake until a toothpick inserted into the center of the cake comes out clean.

Make the lemon glaze icing and spread it over the cake. Serve right away or chilled.
