Vegan  Instant Pot  Red Lentil Dal

Ingredients:

– red lentils – low-sodium          vegetable broth – light canned          coconut milk – chopped onion – chopped tomatoes – coriander seeds – curry powder – garam masala – fresh cilantro – fresh lemon

Step 1

Chop onion & tomato. Rinse lentils. Combine all ingredients.

Step 2

Place in Instant Pot & cook on high for 5 min.

Step 3

Remove the lid & stir the dal.

Step 4

Spoon soup into bowls. Top with fresh cilantro & a squeeze of lemon.
