Instant Pot  Chicken Potato Stew

Instant Pot Chicken Stew is a healthy one-pot meal with tender chicken, potatoes, and vegetables. This is a hearty dish that is also Whole30 and gluten-free.

INGREDIENTS:

– cooking oil – onion – garlic cloves – carrots – celery stalks – button mushrooms – reduced-sodium chicken broth – boneless, skinless chicken breasts  – baby red potatoes – dried rosemary – dried thyme – sea salt – freshly ground black pepper – bay leaf

Select Sauté and add the oil to the inner pot. Once hot, add the onion, garlic, carrots, celery, and mushrooms, and cook until the vegetables start to soften.

Press Cancel and pour in the broth. Add the chicken, potatoes, rosemary, thyme, salt, pepper, and bay leaf. Stir to combine.
