- 1 1/2 cups of chopped honeydew (from about 1/2 of a honeydew melon)
- 1 cup chopped cucumber (from about 1 medium cucumber)
- 1/2 cup coconut milk
- 2–4 fresh mint leaves
- 1/2 cup crushed ice
Instructions
- Combine the honeydew, cucumber, coconut milk, mint, and ice in the base of a high-speed blender.
- Process on high for 30-45 seconds, or until the smoothie is completely blended.
- Serve immediately, or strain the smoothie through a fine-mesh strainer to serve as a cooler.
- To serve this smoothie as a mocktail, top it with a few ounces of chilled sparkling mineral water or naturally-flavored carbonated water (I like the Spindrift Lime flavor).
Notes
- Store any leftovers in a covered glass in the refrigerator for up to 2 days.Â
- Peel the cucumbers before you blend them if you are sensitive to lectins or to the skin of cucumbers.
- You can easily double or triple this recipe if you are serving more than two people.
- Use a high-speed blender to ensure that the smoothie gets very creamy and fully blended.
- if you want to take this smoothie recipe to the next level, you can strain the blended ingredients in a fine-mesh strainer and serve it with a shot of chilled sparkling mineral water or naturally-flavored sparkling carbonated water.
