Combine your honeydew melon, cucumber, coconut milk, mint, and ice in the base of a high-speed blender like a Vitamix.

Step Three

Blend on high for about 30 seconds, or until the mixture is smooth and creamy.

Once you’ve blended your honeydew smoothie, then you can serve it right out of the blender.

Ingredients

  • 1 1/2 cups of chopped honeydew (from about 1/2 of a honeydew melon)
  • 1 cup chopped cucumber (from about 1 medium cucumber)
  • 1/2 cup coconut milk
  • 24 fresh mint leaves
  • 1/2 cup crushed ice

Instructions

  1. Combine the honeydew, cucumber, coconut milk, mint, and ice in the base of a high-speed blender.
  2. Process on high for 30-45 seconds, or until the smoothie is completely blended.
  3. Serve immediately, or strain the smoothie through a fine-mesh strainer to serve as a cooler.
  4. To serve this smoothie as a mocktail, top it with a few ounces of chilled sparkling mineral water or naturally-flavored carbonated water (I like the Spindrift Lime flavor).
