Costco Quinoa Salad

Learn how to make a copycat version of Costco's delicious Quinoa Salad. This version tastes just like the real thing, but made right at home.


– cooked brown rice – cooked red, brown, or green lentils – cooked quinoa – red bell pepper – large tomato – cucumber – baby kale – flat-leaf parsley – olive oil – white wine vinegar (or apple cider vinegar) – lemon, juiced – maple syrup – ground cumin – sea salt – ground black pepper

Combine the cooked rice, lentils, and quinoa in a large mixing bowl. Toss to combine.


Next, add the red bell pepper, tomato, cucumber, parsley, olive oil, vinegar, lemon juice, maple syrup, ground cumin, salt, and pepper. Stir well to combine.


Prepare the ingredients for the dressing and then toss everything together.
