Delicious Costco Quinoa Salad

Learn how to make a copycat version of Costco's delicious Quinoa Salad. This version tastes just like the real thing, but made right at home.

INGREDIENTS:

– cooked brown rice – cooked red, brown, or        green lentils – cooked quinoa – red bell pepper – large tomato – cucumber – baby kale – flat-leaf parsley – olive oil – white wine vinegar – lemon, juiced – maple syrup – ground cumin – sea salt – ground black pepper

Combine the cooked rice, lentils & quinoa in a large mixing bowl.  Toss to combine.

Add red bell pepper, tomato, cucumber, parsley, olive oil, vinegar, lemon juice, maple syrup, ground cumin, salt & pepper. Stir well to combine.

Prepare the ingredients for the dressing & then toss everything together.
