Healthy Corn Casserole

Learn how to make a Corn Casserole without milk or butter that is a welcome addition to any holiday meal or nice dinner. This version is also gluten-free.

Ingredients

– nonstick cooking spray – whole corn kernels – creamed corn – dairy-free yogurt – lemon juice – coconut oil, melted – egg – cornmeal – gluten-free baking flour – granulated sugar – baking powder – sea salt

Combine corn kernels, creamed corn, yogurt, lemon juice, coconut oil, egg, cornmeal, flour, sugar, baking powder & sea salt.

Step 1

Stir gently to combine.

Step 2

Pour batter into a baking dish & bake until the top starts to turn golden brown.
