Simple  Instant Pot Coconut Chicken

Here's how to make a low-carb Instant Pot Coconut Chicken with just six ingredients.  The creamy and flavorful chicken can be served with cauliflower rice or regular rice.

– celery – onion –chicken thighs or             cutlets – reduced sodium             chicken broth – full-fat coconut milk – limes, juiced – salt – pepper


Add celery & onion to the pressure cooker. Place chicken tenders on top of the celery & add chicken broth.


Cook on high pressure for 8 minutes. After cooking, pour in coconut milk & fresh lime juice. Stir. Season with salt & pepper, to taste.


Serve with cooked rice or cauliflower rice, if desired.
