Best Instant Pot Potato Leek Soup

Make this vegan potato leek soup in your Instant Pot or on the stovetop. This is a comforting and delicious dairy-free soup.

Ingredients

– olive oil – leeks – garlic cloves – russet potatoes  – reduced-sodium        vegetable broth – water – dried thyme – bay leaf – fresh chives, diced

Add the chopped leeks & garlic to hot oil. Add the quartered potatoes, vegetable broth, water, thyme & bay leaf to the Instant Pot.

Step 1

Once the cooking time is up, let the pressure come down naturally. Remove the bay leaf & discard.

Step 2

Blend the soft potatoes & leeks into a creamy soup. Serve hot with fresh chives.
