Instant Pot Vegan Chickpea Stew

Instant Pot Vegan Stew is full of Moroccan flavors and healthy ingredients like vegetables and chickpeas. Make this yummy stew tonight!


– olive oil – onion – garlic cloves – can chickpeas – sweet potatoes – carrots – reduced-sodium vegetable broth – ground ginger – ground cinnamon – ground turmeric – cumin powder – sea salt – black pepper – can diced tomatoes, with the juices – full-fat canned coconut – lemon, juiced – fresh cilantro or flat-leaf parsley, chopped (for topping)

Step 1

Hit the sauté button on Instant Pot. Pour in the oil and let it heat for a few minutes. Then, add the onion and garlic and let them cook for a few minutes, stirring occasionally.

Step 2

Cancel the sauté button and add the chickpeas, sweet potatoes, carrots, broth, ginger, cinnamon, turmeric, cumin, salt, and pepper. Stir to combine.

Step 3

Then, pour in the can of diced tomatoes on top, but don’t stir.

Step 4

Lock on the lid and set the time to 6 minutes. When the cooking time is up, stir in the coconut milk and lemon juice.
