Lentil Turkey Soup

When the weather starts to get cold, there's nothing better than a warm and comforting bowl of soup. This lentil turkey soup is perfect for chilly days, and it's packed with healthy ingredients like lean protein and fiber-rich lentils.

INGREDIENTS:

– olive oil – onion – carrots – celery stalks – garlic cloves – lean ground turkey – smoked paprika – ground cumin – chopped tomatoes – green or brown lentils – reduced-sodium          vegetable broth – flat-leaf parsley – salt & pepper

Sauté the vegetables & garlic in the oil, stirring occasionally.

Add ground turkey, spices, tomatoes, lentils & broth to the pot. Stir to combine.

Cover & let simmer until the lentils have softened and the soup has thickened.

Stir in the parsley & season. Enjoy hot!
