Simple  Sweet Potato Casserole

This super simple Sweet Potato & Kale Casserole can be served as a healthy main dish or side dish.  It’s a vegan and gluten-free recipe that is hearty and so delicious!

– nonstick cooking          spray – sweet potatoes – chopped kale – onion – ground cinnamon – dried thyme – sea salt – freshly-ground          black pepper – coconut oil, melted

INGREDIENTS:

STEP 1

In a large mixing bowl, combine sweet potatoes, kale, onion, cinnamon, thyme,  salt & pepper.

STEP 2

Pour the melted coconut oil over the ingredients & stir to combine.

STEP 3

Pour ingredients into a casserole dish & cook until sweet potatoes are fork-tender.
