Quick Indian Yellow Rice

This Indian-inspired Yellow Rice recipe is so fluffy and flavorful. Its vibrant color comes from ground turmeric, an anti-inflammatory spice. Make this healthy side dish in less than 30 minutes!

– long-grain basmati          white rice – reduced-sodium          vegetable broth – ground turmeric – cinnamon stick – cumin seeds – salt – ground black          pepper – golden raisins – chopped cashews

INGREDIENTS:

STEP 1

Place rice in a fine-mesh sieve & rinse under cool, running water.

STEP 2

Pour rice into a medium saucepan.  Add vegetable broth & turn the heat to high.

STEP 3

Once to a boil, reduce heat to low. Stir in turmeric, cinnamon, cumin seeds, salt, pepper & raisins.

STEP 4

Cover the pot & cook until the rice has absorbed all of the liquid.
