Zucchini  Potato Fritters

Try making these yummy Zucchini Potato Fritters that are baked and not fried! They are a healthy side dish recipe.


– zucchini – Yukon gold potatoes  – egg – gluten-free            baking flour  – sea salt – garlic powder – ground black pepper – finely-chopped            fresh chives – nonstick cooking spray

Grate zucchini & potatoes. Place inside a cheesecloth & squeeze out the moisture.


Place the shredded veggies in a bowl with the egg, flour, spices & chives.  Stir well.


Use your hands to form eight thin fritters & lay them on the baking sheet.


Bake zucchini fritters for 20 minutes.  Flip & spray with nonstick spray.  Cook for an additional 15 minutes.


Enjoy the potato fritters with your choice of dip!
