Perfect Over-Medium Eggs 

Over-Medium Eggs are one of the most delicious ways to fry eggs. They are similar to sunny-side up eggs, but they are flipped to cook the egg yolk just a little bit more.

–Nonstick cooking spray or  oil or butter – eggs – Salt and ground black pepper (optional, for serving)

INGREDIENTS:

STEP 1

Spray a medium nonstick or cast iron skillet lightly with nonstick cooking spray. 

STEP 2

While the skillet heats up, gently crack each egg into a separate small bowl.

STEP 3

Then, gently pour each egg into the skillet. Let the eggs cook for 3-4 minutes, or until the whites of the egg have changed almost completely from clear to solid white.

STEP 4

Reduce the heat on the skillet to low and use a spatula to carefully flip each egg. Let the eggs cook for an additional 2 minutes.
